1/4 cup (60ml) unsweetened almond milk
1/4 cup (60g) Greek yogurt (plain, full-fat)
2 tbsp (30g) erythritol or low-carb sweetener
1 tsp vanilla extract
Filling
1/4 cup (60g) butter, softened
1/4 cup (50g) erythritol or low-carb sweetener
2 tbsp ground cinnamon
1 tbsp (10g) collagen peptides (optional, for extra protein)
Frosting
4 oz (115g) cream cheese, softened
2 tbsp (30g) Greek yogurt
2 tbsp (20g) vanilla whey protein powder
2 tbsp (30g) erythritol or low-carb sweetener
1-2 tbsp (15-30ml) unsweetened almond milk (to adjust consistency)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking dish (8×8 inches) with parchment paper.
- Make the Dough:
